At Mulino, we pride ourselves on making all of our fresh pastas in-house with local and organic Lindley Mills flour, which we’ve been using since the early 2010s (!). Lindley Mills, a 10th-generation organic specialty flour mill and mix manufacturer, is located in Graham, NC, so using their flour also means we’re supporting a local, family-owned business. It’s a win-win! Learn more about the company and why we love it below.
What Makes Lindley Mills Flour Stand Out?
All of Lindley Mills’ organic products are non-GMO and certified organic, which means they undergo a yearly inspection. The mill builds up its soils naturally through crop rotations and other sustainable practices without depending on synthetic chemicals. This results in a product that can be traced from field to plate. Not to mention these practices help build increased resilience and security in our nation’s food supply.
Supporting Local Farmers
Lindley Mills also works with several North Carolina organic wheat farmers to grow wheat varieties that are bred to adapt to NC’s climate. Additionally, they’re supporters and members of the Bread Bakers Guild of America!
Taste the Difference
As a producer of some of the highest-quality organic flours in the country (!), Lindley Mills blends tradition, technology, and cutting-edge innovation for their milling approach. While there’s no nutritional difference between organic flour and conventional flour, you can definitely taste the freshness when it comes to organic!
