This is a semisoft, washed-rind, smear-ripened Italian cheese that is named after Val Taleggio. The cheese has a thin crust and a strong aroma, but its flavor is comparatively mild with an unusual fruity tang.
Sweet and tangy, with a frosting-like texture, this is the ultimate after-dinner cheese. The youngest, softest iteration of this cheese is delicious on its own or in classic Italian recipes like the Quattro Fromaggi on our menu.
It is made from goat’s or sheep’s milk. It can have a high sodium content so you need to be careful not to eat too much of it, but it is so full of flavor that a little goes a long way.
