About the Cheeses
Taleggio
This is a semisoft, washed-rind, smear-ripened Italian cheese that is named after Val Taleggio. The cheese has a thin crust and a strong aroma, but its flavor is comparatively mild with an unusual fruity tang.
Gorgonzola Agrodolce
Sweet and tangy, with a frosting-like texture, this is the ultimate after-dinner cheese. The youngest, softest iteration of this cheese is delicious on its own or in classic Italian recipes like the Quattro Fromaggi on our menu.
Mozzarella
It is made from goat’s or sheep’s milk. It can have a high sodium content so you need to be careful not to eat too much of it, but it is so full of flavor that a little goes a long way. Feta is perfect for topping salads. Mozzarella cheese can be high in fat, so you should only eat it in moderation.
Sotto Cenere
Sottocenere al Tartufo is a semi-soft cow’s milk cheese produced in Veneto. A healthy amount of black truffles are added into the paste of this cheese, which is then aged in ashes to preserve it, as per the local Venetian farmers’ tradition.
