Some of our cheesy staples are Pecorino, Reggiano, and Burrata to name a few. ๐ง
Pecorino
Pecorino cheeses are hard Italian cheeses made from sheep’s milk. The name “pecorino” simply means “ovine” or “of sheep” in Italian. You can find Pecorino cheese on our Picci Amatriciana and our Tonarello Carbonara dishes.
Reggiano
Parmigiano-Reggiano is a hard, dry cheese made from skimmed or partially skimmed cow’s milk. It has a hard pale-golden rind and a straw-colored interior with a rich, sharp flavor. Parmigiano-Reggiano is aged at least two years. Reggiano is one of our favorite cheeses and it’s topped on our most popular dishes, the Tagliatelle Bolognese and the Lasagna.
Burrata
Burrata is an Italian cow milk cheese made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains stracciatella and cream, giving it an unusual, soft texture. Our Insalate Burrata is a popular starter but can easily be enjoyed as a main meal.
